植物肉的歷史悠久,曾多以「素肉」稱之,宋代陶谷在《清異記》中就記載了豆腐作為素肉的現象。以往,素肉的追隨者大多是崇尚素食主義但還未能抗拒葷腥誘惑之人,用此替代肉食以滿足口腹之慾;提供素肉的素食餐廳,顧客以中老年人和佛教徒為主,味道亦並非人人接受。更有人擔憂這類製品為了達致與肉相仿的味道和顏色,採用了大量添加物,恐會加重肝腎負擔。
